Whipped Collagen Matcha Latte

(Dairy-Free)

Fluffy coffee was all the rage in 2020. This year, we’re upgrading the original sugary coffee-based drink with this beautiful plant-based matcha latte. The whip is made with an “aquafaba” base using the liquid poured from a can of chickpeas. Sounds crazy, but this simple recipe makes an absolutely delicious morning sipper.

Ingredients

  • 1/4 cup drained liquid from a can of chickpeas (aka aquafaba)
  • 1/4 tsp cream of tartar
  • 3 tbsp powdered sugar
  • 2 tsp matcha powder
  • 5 g Isagenix Collagen Elixir™
  • Vanilla almond milk, for serving
  • Ice

Directions

In a small bowl, combine aquafaba and cream of tartar. Whip with an electric mixer for 5-7 minutes until very fluffy. Add Collagen Elixir. Then add powdered sugar and matcha 1 tbsp at a time, beating between, until all is added and the foam is smooth.

Fill 2 glasses 3/4 full with ice and almond milk. Spoon matcha whip on top. Enjoy!
