The answer may surprise you: it’s all about how quickly your body processes the carbohydrate. Some carbohydrates, typically refined and high in sugar (think: donut) are digested quickly and spike your blood sugar—not good—while others that are complex, due to fiber content and other nutritional factors (think: apple), take longer to be digested and keep your blood sugar more stable.
